Hans, I have taught an introductory course in Asian philosophy several times. All my course syllabi are on line at http://www.unm.edu/~rhayes/teaching.html
If you look at the syllabi under PHIL 108, you can see what (in addition to Vivekananda) I have used over the years. Designing courses like that is challenging and rewarding, and I'm not sure I ever found a combination that satisfied me, but the students always claimed to like PHIL 108.
